Does anyone have any tips or tricks on how to paint white and shade it properly? Every time i try and paint white it just comes out in a solid layer with no definition even if i use thin coats.

When I paint whites I use lighter grays as the base coat and build up from there with actual white being the final coat(highlight).

Basically what Link said
I usally undercoat Black
paint a solid layer of Astronomican Grey (the foundation grey)
add skull white to grey and highlight up from there until you get pure skull white as your final highlight
the number of layers is up to you

White can be shaded with greys, browns, or blacks mostly, though really any color works.
What kind of white are you looking for? Bones? Armor plates? Flora/fauna aspect? All of these and more I do with different techniques, so knowing which you are trying to do would help me help you.
